The Comet and Spitfire kayaks are made so affordable through the process of blow-molding. The mold set up costs are 5 times higher compared to rotoationally-molded kayaks but the process significantly decreases production time and reduces the blemish rate. If you want to get really techy about it:

The blow molded kayaks are made from High Molecular Weight Polyethylene ( HLMI PE ) vs Low density Polyethylene typically used in the rotomolded kayaks. HMW HLMIPE is about 2 1/2 times stronger than Low density Polyethylene.
